This sandwich is now at the top of my fav food list.

It’s got the crunchiness and saltiness from the bacon, creaminess from the goat cheese, sweetness from the figs, and a bit of tang from the apple cider jam. This sandwich covers all the bases and has the perfect fall vibe. Here are the details:

  • Ciabatta Bread (can be subbed for gluten free option)
  • Bacon (pasture raised preferred)
  • Goat Gouda
  • 1-2 Figs (fresh is preferred but dried works also!)
  • 1/2-1 cup Arugula
  • 1 Tbsp Apple Cider jam (any jam also works)
  • 1 Tbsp Butter for toasting bread

  1. Heat pan over high heat and cook bacon to desired doneness
  2. Clean pan, then over medium heat melt butter
  3. Slice Ciabatta in half, place bread (crust side up) in pan and toast until golden brown
  4. Cut desired amount of goat cheese and figs into slices
  5. Spread jam over toasted bread, then add bacon, sliced goat gouda, figs, and arugula
  6. Enjoy! (A side of bone broth would pair perfectly and provide some extra protein)
